Maybe some racers can chime in here. Those are tough questions because it all depends on how far you want to take it.

From the first page where there is this quote

"Based on successes and failures from many S2000 owners, we can use an offset calculator to figure out what other offsets and tires will work. These are minimum recommended offsets. You can use a higher offset if you want, and you will get additional fender clearance."

Don't you mean "need additional fender clearance"?

No. All else held constant, higher positive offsets move the wheel toward the center of the car, away from the fender, so you get additional fender clearance.

Can I ask out of 17x7 +48 or 17x7.5 +45 fronts, which will fit without rubbing, with being lowered a good amount and with 215 or 225 tires.

And in the rear where I have rolled fenders, out of 17x8 +45 or 17x8.5 +40, if the +40 will fit? 245 or 255 tires. I dont know if even being rolled is enough to make the +40 fit without rubbing.
