any tall people with stock seats and pedals and what not have problems doing heel-toe? Im 6'3" with size 11-12 shoes, and my legs are to long to hit both pedals... how can I fix this... my only idea is a new seat where I can completely straighten my legs.

You could have your legs shortened slightly.

On a more serious note, try shoes with very thin soles. That should give you a bit more room. A lower seat with more rearward adjustment would definitely help as well.
